“My passion for cooking started when I was a little girl, I loved to spend hours in the kitchen helping my mother and my aunties in Sardinia, making a mess but learning delicious traditional Italian recipes, using authentic, seasonal, fresh ingredients and preparing everything from scratch.
As Sardinia is just a small Italian island, we kept our traditions alive and we still use ancient methods to cook and treat food. Every house has a built-in woodfire oven, where each week the women of the family get together to bake bread for the week and amaretti, normally baked afterwards using the remaining heat. I grew up seeing how cheese is made from our goat’s milk, how we make dry sausages after killing a pig. We use all parts, nothing gets wasted, as tradition says everything that mother nature gives us is sacred!
With Ambrosia Food Creation I aim to bring to the table the authentic Sardinian traditions, flavours and ingredients, creating a fusion with all the traditional cuisines I encountered during my career. Taking the best from everywhere around the world, simply following nature’s language!
In Italy we say that “a tavola non si invecchia” (one does not grow old at the table), the pleasure of good food, wine, and company is such that the passage of time is suspended. For me food is not only nourishing but also comforting, loving, fun and stimulating.
I started my first job in a pastry shop while I was studying philosophy at the University of Milan, I was so interested in baking and cooking that I soon decided to leave my studies to fully focus on my career as a chef. For a few years my life became working in the morning at the bakery, culinary school at night and all my spare time working for free in different shops to learn every possible technique. I just couldn’t get enough!
