OK… WHAT IS SOURDOUGH?

It is a slow-fermented bread. It’s unique because it doesn’t require commercial yeast in order to rise. Ours is made using our own genuine sourdough starter, few years old and always fed with extra love and no other additives, so the taste is a natural enhancement to the flavour of the bread that never hangs too long or too obtrusively on your palate.

Sourdough is known for its characteristic tangy flavour, chewy texture and crispy crust. 

This bread is incredibly healthy, it dominates when compared to supermarket loaves. The naturally occurring acids and long fermentation help to break down the gluten, making it more digestible and easier for the body to absorb. And it tastes soooo good!

TORTELLINI

Traditionally stuffed with a mix of meat (beef, pork loin, prosciutto, mortadella) Parmesan cheese, egg and nutmeg. Rigorously handmade with lots of Love and Passion!

As the Emilian love, try them cooked into meat stock! The day after is common to toss tortellini leftovers along with heavy cream and Parmigiano Reggian

WHAT IS CULURGIONES?

Culurgiones is a traditional dish of Ogliastra, a region situated in Sardinia. In most of the towns in the area, where the women still know the secrets of its preparation passed down orally from generation to generation, the dough is still rolled out by hand. 

It’s as thin, elastic, and as smooth as it ever was. Pasta circles are cut out of this dough, and the filling (in its many variations) is placed in the centre.

Then the classic “wheat spike” closure is formed between the thumb and forefinger. The appearance of Culurgiones has a striking similarity with the shape of wheat grain as it is believed to appease the new crop in August. They are even considered to be the talisman that safeguards family deprivation.

I’ve also learned this art from my grandmother, mother and aunties.

These are Sardinian stuffed pockets, the dough is made from pure semolina flour, water and salt, while the filling is commonly made with boiled potatoes, olive oil, cheese, garlic, mint and nutmeg.

The origin of this famous Italian staple food dates back to the 14th century. The recipe for traditional Italian ravioli mainly features mixed green herbs, fresh cheese. In Rome and Latium the filling is made with ricotta cheese, spinach, nutmeg and black pepper.
In Sardinia, ravioli are filled with ricotta and grated lemon rind.

GNOCCHI

The word gnocchi may be derived from the Italian word nocca, meaning knuckle. It has been a traditional type of Italian pasta since Roman times. It was introduced by the Roman legions during the expansion of the empire into the countries of the European continent.

Choose from Potato or Pumpkin base, traditionally handmade with Love.

Lorighittas, a Sardinian Deluxe pasta Named after the Sardinian word for the iron rings used to hitch horses, has been passed down by women from generation to generation. In the days before radio, TV and mobile phones, making lorighittas was an opportunity for women to get together to gossip and sing.)
